U.S. bars that specialize in craft beers are increasingly pouring them in the European style—i.e. so that a billowing head of foam sits on top. Foam, made up of bubbles of carbon dioxide, traps a great beer’s aromas so that they can be released slowly, magnifying the beer’s flavors.
