Sur Lie

Literally, “on the lees.” Some white wines, notably white Burgundies, are, for a period of time, left in contact with the lees (spent yeast) after fermentation is complete. Wines that have been left take on a creamy, rounder mouthfeel and generally display more complex flavors.
