Minutes of time a proper Ramos Gin Fizz should be shaken according to the late Henry C. Ramos. In 1888, the New Orleans saloon keeper created his eponymous version of the standard gin fizz by adding egg whites, orange flower water, lime juice, and cream to the classic components of gin, sugar, lemon juice, and club soda. Ramos insisted the shaking marathon was vital for the cocktail to emerge whipped and creamy. Look to New Orleans for inspiration this dry (don’t bet on it) January.
