The average number of days that a grape variety takes to ripen, a period also known as hang time. In an especially hot year or hot place, grapes may ripen after only 100 days; in cooler years and places, after 130 days. In most parts of California, grape vines pollinated themselves about a month ago,  which means that 2 and a half to 3 months from now, the grapes will be picked.
