The spores form millions of conidiophores (structures) that release the fungus, which then lands on grapes. A fragile process, Botrytis is critical to many of the world’s great sweet wines, including Tokaji Aszú, Sauternes, Ausbruch, Sélection de Grains Nobles, and Trockenbeerenauslese.
