It Takes Two To Be Tangy
Though many of us immediately think of red wine when we think of cheese, the tangy, creamy, chalky, salty, and fatty flavors of most goat cheeses can neutralize the flavor of many red wines. Wines made from sauvignon blanc, on the other hand, are perfect counterpoints in part because they are so tangy themselves. In particular, the combination of a glass of sauvignon blanc and some Crottin de Chavignol, a goat cheese from the French village of Chavignol, is considered to be a classic. (Crottin, btw, is French slang for goat turd).
