Known in Ireland as boxty (Gaelic: bacstaí), these potato pancakes are made from both mashed and grated raw potatoes, preferably of a floury consistency, along with flour, leavening, and optional buttermilk, eggs, milk, or melted butter. Boxty originated in Ireland in the late 18th century. Today the crisp, chewy pancake is a staple of Irish cooking with many modern interpretations. There’s even a boxty quesadilla.
