It may still be February, but every Friday night you can drink sparkling springtime. And for a steal. Roger Goulart’s fresh, frothy, bone-dry Cavas are always good values. But a Gran Reserva Cava that’s just $20? That’s insane. We, however, are the lucky beneficiaries. Cava, of course, is Spanish sparkling wine made by the painstaking traditional method of second fermentation inside each individual bottle. Most Cava is made, as this one is, from three Spanish white grapes: Xarello, Macabeo, and Parellada. To achieve its status as a Gran Reserva, this sparkler was aged 36 months on its yeast lees, giving the wine a gentle creaminess. 12% abv
