Year that commercial marshmallows were invented in Rochester, New York, by one Joseph Demerath who made them with gelatin, rather than costly mallow gum, originally the key constituent. By 1915, the fluffy white blobs were being marketed as ingredients. Marshmallow cookbooks made the scene, as did fall’s most beloved culinary travesty–sweet potato casserole topped with marshmallows.
